faith [00:20] family friends and of course food I'm [00:22] here in my kitchen at Our Lady Mount [00:24] Carl and we have a very special guest [00:26] for you today Troy Miller the president [00:28] and CEO of nrb TV hi I'm Troy Miller [00:31] president and CEO of the National [00:33] Religious broadcasters Association and [00:35] it is my pleasure to be here today in [00:37] Williamsburg Brooklyn with mon sior [00:40] Jamie on breaking bread I'm hoping to [00:42] help mon sior today in the kitchen but I [00:44] may get my hand slapped a couple [00:52] times cooking in an early age became [00:55] something that was really ingrained with [00:56] me I really did to got to sit there and [00:58] work with my grandmother she made [01:00] everything from scratch great time of [01:01] bondie so that carried on with me and my [01:03] kids and especially my daughter now my [01:05] daughter's really picked up cooking and [01:07] we love to be in the kitchen [01:08] [Music] [01:11] together how are you I thought you were [01:13] cutting out on me how you doing good to [01:15] be with you today now first I have to [01:16] say welcome when you come into my [01:18] kitchen you have to work okay you look [01:19] like you're going to an office meeting [01:21] or something well don't let this fool [01:23] you I don't like to be in the kitchen [01:24] all right I have an apron here this is [01:25] one of my new aprons it has my tomato [01:28] sauce on it did you buy a jar yet no not [01:30] yet well if you do well today I'll give [01:32] you one so tell me nrb television that's [01:35] a big business kind of like a Christian [01:38] world view PBS so we do a lot of [01:40] documentaries and biographies and we [01:42] actually have a couple of cooking shows [01:44] on there maybe we'll get you on there [01:45] someday and we reach all across the [01:47] country and around the world and it's [01:49] just a way for people to build their [01:50] faith and have a programming that [01:52] supports their faith it's so important [01:53] to get the message out there especially [01:55] to our younger generation because [01:57] they're not coming to our churches [01:58] they're not coming to our house of [02:00] worship we have to bring it to them and [02:01] I know social media today is very big [02:04] every teenager today every young adult [02:05] today they're carrying a television with [02:07] us they have their phone it's in their [02:09] pocket you look around they're [02:10] constantly on it they consume more media [02:13] today than ever in the history of [02:14] mankind and so look Christians ought to [02:16] be the ones that are out there getting [02:18] that message out because there's a lot [02:19] of Despair let's say that in the world [02:21] today and that hope the hope that Christ [02:24] gives us the hope that the church gives [02:26] us the hope of something that really [02:29] matters in life life is a message that [02:30] changes people I think we have to focus [02:32] on how to get our churches out to the [02:34] people and that's exactly what you do I [02:37] mean I do it through food I mean I do it [02:39] through my cooking I do it through my [02:41] Ministry but you do it through the [02:43] internet and you do it through social [02:45] media you're exactly right look the nrb [02:47] the association our members we have over [02:49] 1500 members that are into television [02:51] broadcasting radio podcasting blogging [02:54] film making books audio books all of it [02:56] you name it any way that we communicate [02:58] today we have members out there [02:59] communicate and that's what we have to [03:01] do we have to saturate the culture today [03:03] and go out to where people are because [03:05] they're not coming into where we are now [03:07] and we have to meet them with their real [03:08] world problems that they're dealing with [03:10] and look we have the answer you hit on [03:12] something that I use all the time it's [03:14] not like years ago where you built the [03:16] churches you opened the door and they [03:19] just flocked in we built our schools and [03:21] they were overcrowded they just came now [03:24] we have to go out and we have to bring [03:26] them in one at a time but we have to [03:29] meet them where they're at what you're [03:31] doing is the way to do it you can reach [03:33] so many people it's so important I [03:35] understand you were in the Navy y right [03:37] I six years in the Navy I served as a [03:40] Gunners make missiles and I served on [03:42] the USS Bunker Hill I thought maybe you [03:44] were one of the chefs on [03:46] the no back then they really let me near [03:49] the kitchen on that those guys cook for [03:51] bulk they they don't really cook for [03:54] Taste they cook all I say the Navy food [03:56] was pretty good there but I did spend [03:58] seven months in the Persian golf and [04:00] defending our country and so I'm very [04:01] proud of our service and proud of all of [04:03] our veterans out there who serve yeah so [04:05] tell me a little bit about your Sicilian [04:07] Roots my grandmother was actually first [04:09] generation Sicilian so she was the first [04:11] generation born here in America her [04:13] mother and her father were both born in [04:15] poo ccy her mother came over when she [04:17] was about 5 6 years old her dad was 19 [04:20] they both came through New York and then [04:21] Chicago where they met married and [04:23] homesteaded out in Nebraska so yes [04:26] Nebraska know they had Italians in [04:28] Nebraska they did and actually Su City [04:30] Iowa has a big Italian Community out [04:32] there her father his brother several [04:35] family members all became kind of [04:37] farmers in this community out there you [04:39] know a lot of times people say how come [04:41] you always cooking Italian food don't [04:43] you cook anything else I said well my [04:44] Italian Roots but we know how to cook [04:46] Italians you know and there's more [04:48] Italian restaurants around the world [04:49] than I think any other restaurants you [04:50] know tell me how has your Italian Roots [04:53] affected your life you know your family [04:56] I mean not just the food but you know [04:58] the way we grew up family value [05:00] that's right Family Values but you know [05:02] food was important to that cuz the [05:03] eating was a center of around every [05:05] activity I'll never foret my grandma's [05:07] house she would start in the morning to [05:09] make something and then the family would [05:11] just slowly start to roll in so aunts [05:14] and uncles and great ants and uncles and [05:16] cousins all across would roll in and [05:19] that's really what brought family [05:20] together and and it was just a great [05:22] time you know and it would go on all day [05:24] you know especially on the weekends [05:26] they'd start at breakfast time and then [05:27] by Night it'd be going on and and then [05:29] we'd start playing cards and some other [05:31] course we did we had a few arguments [05:33] here and there the dishes got thrown [05:35] across the table that's what the table [05:38] is all about that's what food does it [05:40] brings people together it was a reason [05:43] to get together to get to know each [05:44] other spend quality time with one [05:47] another and share life's experiences [05:50] with one another I think so too it was [05:52] such a great time of bonding as a family [05:55] and it brings back so many fond memories [05:57] and that roots and I've tried to do that [05:59] with my family I think the meal is so [06:00] important and I also think time in the [06:02] kitchen together is so important exactly [06:04] connects us with our loved ones who have [06:07] gone on any specific items or Foods or [06:10] recipes that really you remember as a [06:12] kid that really you love today well my [06:14] grandma she grew up with the Sicilian [06:16] mom and family so she learned a lot of [06:19] traditional recipes but she also grew up [06:21] in the Midwest and so she learned a lot [06:23] of Midwest Comfort Foods as well and [06:25] sometimes she would blend those that's [06:27] what a chef does that's what our [06:28] grandmothers did pasta and fried chicken [06:31] just a lot of that but the real fond [06:33] memor is my grandma made everything from [06:35] scratch as a kid she had this noodle [06:37] maker it was the old cast iron one with [06:39] the crank I remember it's at the table [06:41] for hours this table covered with flour [06:44] and pressing out and pulling out dough [06:45] it's like playing with Play-Doh right [06:47] you know it was so much fun to be with [06:49] her the thing is we like to eat and [06:51] table brings us together I'm going to [06:53] make a recipe here I'm sure you had as a [06:55] sicilian arini which is the Sicilian [06:57] rice bowls I hope they meet up to your [07:00] expectations I'm sure you've had it many [07:02] times growing up I have a little bit of [07:03] my grandma's taste buds going there [07:05] don't go away I'm going to put Troy to [07:07] work we'll be right [07:14] back welcome back to Breaking Bread I'm [07:16] with Troy Miller from NRV television and [07:18] today we're going to be making Sicilian [07:20] rice bowls I made my rice our boreo rice [07:23] because it's a little more starchy than [07:25] other Rices I also cooked it with [07:27] chicken broth much more flavor I'm going [07:29] to put in here some [07:32] parsley some basil now the rice you can [07:35] make a day ahead of time some poman [07:37] cheese just going to mix this all [07:39] together and by making it a day ahead of [07:42] time it makes it a little easier to form [07:44] the rice balls just mix that all [07:46] together now what I have here I made a [07:49] little meat sauce what I did I sauteed [07:50] some garlic some beef I then put in some [07:54] peas some onions and I put a little red [07:58] wine in here and I just sauteed that and [08:01] now what we're going to do is once we [08:03] have the rice all made we take a little [08:07] bit and you kind of put it in the palm [08:10] of your hand and you flatten it out of [08:12] course we're going to put this meat [08:14] mixture right in the middle okay and [08:17] then what we do is we fold this over and [08:20] if you need a little bit more rice you [08:21] put a little bit more rice on top and [08:23] you kind of make it like a meatball now [08:24] some people make them round some people [08:26] make them like almost like oval shape I [08:28] like the round traditional then what we [08:31] do is we put in a little flour The [08:35] Standard breading procedure which is [08:39] basically flour you dust off the excess [08:44] flour then you put an egg and you be [08:47] careful don't put your fingers in there [08:49] and then drain out the egg put in [08:53] here and you have your the rice ball you [08:57] shape it again now some people like to [09:00] double dip creates a little firmer crust [09:03] on here crust on the side yeah let's do [09:05] it one more time the second time you [09:07] don't have to do as much as you do the [09:09] first time back in the [09:12] egg okay let it [09:15] drain and breadcrumbs here is that this [09:17] is breadcrumbs I'm sorry I didn't say [09:19] that but it's breadcrumbs and it's not [09:22] seasoned plain we have enough flavor [09:25] inside and we'll just put our rice balls [09:28] here want to try to make one sure we'll [09:31] switch here I think you've done this [09:33] before just a few [09:37] times and my grandma would say get mad [09:40] at me cuz I had big hand she said don't [09:41] make him that big little meat right [09:44] little meat sauce with the peas and the [09:46] onions little garlic move it around here [09:49] get a little more rice on the [09:51] top you got it there we [09:54] go that looks [09:56] good got cover that up close that up [10:00] all right all [10:02] right into our flow all right give it a [10:05] nice little roll yeah a nice atalian boy [10:08] you your grandmother taught you [10:10] well okay okay dust off that flow dust [10:14] off that flour yeah we our kitchen had [10:16] flour everywhere right everywhere all [10:19] right and the Egg don't touch right all [10:22] right let's pick that up that looks good [10:25] put that in the bread whoops we forgot [10:27] to Shake it Off yeah you forgot to Shake [10:29] It Off that's okay yeah we knew we [10:31] wouldn't get you stick in my kitchen [10:32] I'll teach you what we wouldn't we knew [10:33] we wouldn't get it just totally Perfect [10:36] all right and we'll keep this one a [10:38] little more mild how's that okay that's [10:40] good but wanted to shape it a little bit [10:42] more yeah yeah see how big see how big [10:44] that is see that that's those big hands [10:46] I'm sorry that's that that's that big [10:47] farm boy hands there that's why the same [10:50] person has to make the right RS each [10:52] time now I have to say I mine look a [10:54] little bit nicer than yours but I [10:56] mean you've been out of the kitchen for [10:58] a while I'll let it go [10:59] but now tell me any special projects [11:02] that nrb television is working on I'm [11:04] running two different organizations and [11:06] the association deals with a lot of [11:08] cultural issues today and issues that [11:10] are addressing anybody who wants to be [11:12] Christians who want to be into media and [11:14] want to be in the media sector and want [11:16] to be able to continue to communicate so [11:18] you know your show to be able to just [11:20] get out there and as a Christian be able [11:22] to talk about your message not only [11:23] cooking but a message of Faith as well [11:25] so we're working very hard in Washington [11:28] DC to make sure that the laws that come [11:30] through in the regulatory environment is [11:32] a fair [11:35] environment what are the most important [11:37] issues you think right now that [11:39] Christians have to get out there [11:40] policies that hold families together and [11:42] don't tear families apart and so we have [11:45] to do as the church we're responsible to [11:47] speak truth and protect those Among Us [11:51] that's the key protect you know I [11:54] believe God created every single human [11:58] being mhm every every single human being [12:00] has to be respected and we have to [12:03] accept every single human being for who [12:05] they are every ethnic group everyone [12:07] should be respected the basic human [12:10] right is that we were all created in the [12:12] image of God Humanity stands different [12:15] from the rest of God's creation and as [12:18] Christians then we are called to speak [12:21] the truth in love and not in hate none [12:23] of us want to see anybody spend eternity [12:26] in hell we want to see him spend [12:28] eternity in God presence in the presence [12:30] of God so we speak the truth but it's [12:33] from a deep deep love of people that we [12:35] speak that truth it's not from hate it's [12:38] not from Envy it's not from greed it's [12:40] the fact that we love people and we love [12:43] them not just in this temporary life we [12:45] love them in the eternity I normally I [12:47] don't like to get too political on our [12:49] show but what you do you have to really [12:52] in a sense try to promote the Christian [12:55] faith and you have to be a little [12:56] political at times we're going to fry up [12:58] these rice bows and you let me know how [13:00] they taste don't go away we'll be right [13:02] back and we're going to try some of my [13:03] Sicilian rice [13:08] bowls I'm like my grandmother I love to [13:10] make a lot of different pastas lots of [13:12] different lasagnas we've made raviolis [13:14] together but my kids kind of call me the [13:16] leftover Chef because I like to take [13:18] leftovers do something different with [13:20] them and the family's like hey didn't we [13:22] just have this last week and I'm like no [13:24] and they're like okay [13:27] [Applause] [13:30] welcome back to Breaking Bread I'm here [13:32] with Troy Miller from nrb television we [13:34] have our finished rice balls and we're [13:35] going to talk a little bit more about [13:37] nrb so first Troy let's try these rice [13:39] bowls you got to let me know they [13:42] taste we get one we get [13:47] one wow look at that oh that looks [13:51] wonderful now of course rice but I like [13:53] to eat with my fingers but we're on [13:55] television so we have to [13:57] [Music] [14:00] M at the same [14:02] time okay I can tell you that grandma [14:05] vuso would approve oh that's all I need [14:07] yep oh man when the grandmothers approve [14:10] it's good oh you guys are missing out [14:13] speaking about grandmothers you have [14:14] children right when they take a bite I [14:16] know you can't you can't resist I know I [14:18] have four children four four children [14:20] all adopted God has blessed us with four [14:22] wonderful adopted children I have two [14:24] boys that were born in South Korea and I [14:27] have a daughter who was bornn in China [14:28] and I daughter from India wow so yeah [14:31] Mosaic little bit of Mosaic little un [14:33] flag at our house and it's a lot of fun [14:35] you know we talk about children and we [14:37] talk about the table that's where [14:38] everyone came together I think raising [14:41] children today the table is missing yeah [14:44] you know you hear of all these things [14:45] that have gone on in our world H you [14:48] especially these young kids that go [14:49] astray mhm where are the parents you [14:52] know didn't they see what was going on [14:54] with their children I mean you sit down [14:55] at a table you see if a child is upset [14:58] you see if a child is was depressed but [15:00] there was nothing it's a time for the [15:01] children to learn from their parents you [15:04] know the way they interact with the [15:05] things they say you know that's a [15:07] learning experience it's time when you [15:09] really get to know one another that's [15:11] right you know the table is that time [15:13] where you as parents as you said you get [15:15] to know your kids and when you know your [15:16] kids you can look as you said and see [15:19] there must be something wrong here tell [15:20] me what's wrong or tell me what's going [15:22] on or just time to have fun and laugh [15:24] tell a few jokes find out what went on [15:26] during the day but it's also a time for [15:28] us to really transfer and show our kids [15:30] our own values you know it was always so [15:32] important for us to get together at the [15:34] table and first of all give thanks right [15:36] to give thanks for all of what God has [15:38] provided for us the food that's there [15:40] our family for health and that really [15:42] carries on today with our kids you see [15:44] that now when they go out and I see at [15:45] my daughters like when they're looking [15:47] at young men now they're like are these [15:49] young men respectful to their parents [15:51] are they respectful to the life that [15:53] they grew up and so that is so important [15:54] do they have the same values and do they [15:56] have the same values and as you said [15:59] kids have so many distractions today so [16:02] sad to go into the restaurants even just [16:04] to the tables at the restaurants and you [16:05] look across and you see a kid here on a [16:08] device and a kid here on a device and [16:09] Mom and Dad are on device nobody's [16:11] talking nobody's communicating so true [16:14] it's affected us as a culture today we [16:15] need to get back to that today [16:17] everyone's looking at recipes we got to [16:19] follow the recipe growing up in an [16:20] Italian household I would call my mother [16:22] Mom I have a couple of people coming [16:23] over for dinner like in an hour she'd [16:25] open up the refrigerator whatever was [16:27] there she put together right and I think [16:29] I inherited that you know to use what [16:31] you have and to prepare a great meal I'm [16:33] sure you have experienced the same thing [16:35] I have and also I grew up in a very poor [16:37] home in a very poor environment but and [16:40] on a farm you're used to using [16:41] everything on the farm you don't nothing [16:43] goes to waste and so that carried on and [16:46] when my kids were younger and we would [16:47] cook at home and then you'd put [16:49] leftovers in the fridge and we always [16:50] had Thursday was leftover night and my [16:53] kids got excited about it because I [16:55] didn't just take the leftovers out warm [16:57] them up heat them up throw them on the [16:58] table [16:59] I always try to do something different [17:01] with these leftovers to make it look [17:02] like a new meal so my daughter coined me [17:04] when she was about 9 years old the [17:06] leftover Chef really yeah so to take [17:09] them out and do something different and [17:10] it was fun on senior because when they [17:13] got older then it was my daughters in [17:15] the kitchen with me going Dad can we try [17:17] this with the potatoes or the green [17:19] beans or this can we do this and it was [17:21] a lot of fun you know I do the same [17:22] thing right I prepare meals and people [17:24] come they joke oh what are we have [17:25] tonight leftovers I said yes I'm a chef [17:28] and I can make great things with [17:30] leftovers that's right you know that's [17:31] how you can tell a true chef and that's [17:33] what our parents were our mothers our [17:35] fathers our grandparents they use what [17:37] they had that's right you know it's not [17:38] like you can go order and then the food [17:40] gets delivered and you have every [17:42] ingredient in front they didn't live [17:44] that way we didn't grow up that way we [17:45] had to use what we had and even in life [17:47] we have to use what we have around [17:51] us I have to say I have a cookbook that [17:54] came out last year not that you need it [17:56] but you may find some recipes in there [17:58] and and I just came out with my tomato [18:00] sauce okay so this is a gift to you [18:03] thank you for these and I can't wait to [18:04] try the sauce but nrb's convention is in [18:07] February we'll be in Grapevine Texas [18:09] we'll be at the Gaylord Texan we'll be [18:11] there February 24th through the 27th [18:14] it's the largest gathering of Christian [18:16] communicators people that are working in [18:18] Christian Media so if you in your church [18:20] or your Parish or wherever you're at you [18:22] want to know how to do media better then [18:24] you need to come to nrb I'll that's what [18:26] I do communicate you know yeah that's [18:28] right you know through the cooking show [18:30] through the pulpit through my life you [18:32] communicate and I'm sure I can pick up a [18:34] lot of pointers there and I look forward [18:36] to that and also maybe I can help n RB [18:39] get the message out as well God has [18:40] blessed you we need
